Preparation:

Over medium heat, melt butter in
medium saucepan, add onion, garlic and carrot, brown
lightly. |

Add flour and mix well. |

Add tomato paste, tomato juice and chicken stock. |

Bring to boil, stirring constantly. Simmer for 10-12
minutes, liquidize, and then pass it through a
sieve. |

Bring to boil in a clean pan, add salt & pepper,
then gradually add cream, stir well. Serve with
croutons and cream. Enjoy. |
