Ingredients
For the kadhi
  • 2 cups of KDD yogurt
  • 3 tbsp of besan
  • 1/4 tbsp of asafetida
  • 1/2 tbsp of cumin seeds
  • 1/4 tbsp of methi seeds
  • 3 whole red Kashmiri chilies
  • 1 tbsp of turmeric powder
  • 1 tbsp of chili powder
  • 1 tbsp of coriander powder
  • 1/2 tbsp of mango powder
  • 1/4 tbsp of garam masala
  • 2 tbsp of ghee
  • 6 to 8 curry leaves
  • Salt as taste
For the Pakori
  • 1 cup besan
  • 1/4 cup of finely chopped onion
  • 1 tsp of asafetida
  • 1 tsp of red chili powder
  • 1 tbsp of fenugreek leaves
  • Salt as per taste
  • Pinch of baking soda 1/4 cup of water
  • Oil for frying
Preparation
For the Pakori
  1. Add besan, asafetida, red chilli powder, fenugreek leaves, salt, baking powder and ¼ cup of water
    Whisk the batter for some time till smooth.
  2. Add the onions and mix well.
  3. Heat oil in a kadhai and drop the batter to make small pakoris.
  4. Fry till golden brown and drain on absorbent paper.
  5. Keep aside.
For the kadhi
  1. Mix the yogurt and besan in a blender with a cup of water.
  2. In a big pan add a little ghee, to this add asafetida, jeera, curry leaves, methi seeds and whole chilies.
  3. 39 When nice and hot add the yogurt mix to this. Add kashmiri chilli powder, turmeric powder, chilli powder, coriander powder, mango powder, garam masala and salt
  4. 40 Cook for 15 mins and add the pakoris in it.
  5. 41 Cook for another 10 minutes and serve with steamed rice.
